Sarma Beyti is a popular Turkish dish made with ground beef or lamb mixed with herbs and spices, shaped into a long roll, wrapped in lavash or yufka bread and grilled. Here's a recipe for Sarma Beyti:
Ingredients:
- 500g ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint leaves
- 2 tablespoons tomato paste
- 2 tablespoons red pepper paste
- 2 teaspoons ground cumin
- Salt and pepper to taste
- 4 sheets yufka or lavash bread
- 4 skewers, soaked in water
Instructions:
- In a large bowl, mix the ground beef or lamb with the onion, garlic, parsley, mint, tomato paste, red pepper paste, cumin, salt and pepper.
- Knead the mixture for a few minutes until it forms a smooth and homogeneous texture.
- Divide the mixture into four equal parts and shape each part into a long roll.
- Place a sheet of yufka or lavash bread on a flat surface and place one of the meat rolls on it.
- Roll the bread around the meat, leaving some space at both ends and secure it with a skewer.
- Repeat with the remaining meat rolls and bread sheets.
- Preheat the grill or oven to 180C.
- Grill or bake the Sarma Beyti rolls for 20-25 minutes, turning them occasionally, until they are browned and cooked through.
- Serve the Sarma Beyti hot, sliced into bite-size pieces, with yogurt sauce and grilled vegetables.
